Tomatillo Sauce
Ingredients:
- fresh tomatillos (enough to mostly fill a sheet pan)
- 4 peeled garlic cloves
- salt (to taste)
- sugar (to taste)
- chipotle paste (to taste)
Instructions:
- Remove husks
- rinse off sticky stuff
- cut tomatillos in half
- put on sheet pan with four garlic cloves; pan should be pretty full
- broil on top shelf for 20 min.
- let cool a bit - for safety
- blend until smoothish
- taste & add salt and/or sugar as needed
- repeat above until perfect
- add 1 tsp. chipotle paste
- blend and adjust above
- transfer to ziploc bags, 16-18 oz each
- freeze on a flat tray; keep sauce away from the zipper
