How to make a roux
Melt some butter and put an equal amount of flour in and cook it over a
very low flame for as long as you have patience. Neither the flour
nor the butter should turn brown. It's important that the flour cook,
and not just mix with the melted butter, otherwise it will taste
like flour, which is icky.
This is just a primer, look at Joy of Cooking or the like for
more better info.
