Oatmeal Pancakes
Ingredients
- 1½ Cup rolled oats
- 2 Cups buttermilk
- 2 Eggs, beaten
- ¾ Cup flour (Source said ½ C, too wet)
- ½ tsp. baking soda
- ½ tsp. salt
- 1 tsp. vanilla
- 2 tablespoons Brown sugar, maple syrup, or honey
- ⅛ Cup canola oil (or melted butter)
- ¼ tsp. nutmeg (or not)
Soak the oats in the buttermilk for 20 minutes (30 perhaps?) in a big bowl
Mix eggs, vanilla, sugar, and oil/butter in a small bowl.
Mix dry ingredients in a third bowl in a small bowl.
Stir oats and wet stuff, then add dry stuff.
Electric skillet at 380° or cast iron pan at 275° (at least on
the "test stove" with "auto-temp")
¼ C. measuring
scoop into pan, flip when the edges become dry and the bubbles stop
"healing"
Notes:
I'm not convinced the nutmeg is a good idea.
If you're adding blueberries, add them to the batter. Frozen blueberries
work great, and they're cheap and tasty all year round.
