Mrs. Morse's Chocolate cake
There are two versions here, one is the original that came from Mrs. Morse
herself, the other is the version used by the
Lompoc Cafe in Bar Harbor. The technique is the same, only the ingredients
are different.
This is the original from Mrs. Morse.
Ingredients:
- 2 Cups Sugar
- 2 heaping Tablespoons Shortening, this means lard or Crisco (ick)
- 2 Eggs separated
- 6 squares chocolate
- 1 Cup Strong Coffee
- 1 Cup Sour Cream
- 2 Rounded Teaspoons Baking Soda
- ½ Teaspoon Salt
- 2 Teaspoons Vanilla
- 2 Cups Flour
Mrs. Morse's Chocolate Cake (Barbara's version)
This is the one used in the New Old Lompoc Cafe in Bar Harbor
for the Chocolate rasberry torte.
Ingredients:
- 1 Cup Sugar
- 3 Tablespoons Buttter
- 2 Eggs (separated)
- 6 Squares Bitter Chocolate (6 oz.)
- 1 Cup Coffee
- 1 Cup Yogurt
- 1 Tablespoon Baking Soda
- 2 Tablespoon Vanilla
- 2 Cups flour
Melt chocolate in the hot coffee.
Cream the sugar and butter and add the egg yolk. Mix the cooled
coffee and chocolate mixture with the creamed butter and sugar, then
add the vanilla. Mix in the dry ingredients and the yogurt to the coffee
mixture, alternating wet dry, starting and ending with dry.
Fold in the beaten egg white.
bake for roughly 30 minutes at 325° to 350° in a 9" x 13" pan.
