Cranberry Nut Bread

Ingredients:


Preheat oven to 325° F

Mix the flour, baking powder and salt together.

Grate the rind of the orange and set it aside.

Squeeze the orange, and add enough boiling water to make ¾ C. total liquid, then add the orange rind and butter to the hot mix.  (melt the butter)

In a big bowl, beat together the egg and sugar.  Beat it a bunch, not just “mix”.

Add the orange mixture to the egg and sugar mix.

Add the cranberries and nuts

Mix in the flour

EXPERIMENT: Let the mixture sit for a bit (5 minutes?) to rise a bit.

Pour everything into a greased 9"x5" bread pan. (9x5 at the top, it’s a small pan)

Bake at 325°F until a knife or toothpick comes out clean.  (about 1 hour 1¼ hours )


notes:

Chopping the cranberries can be exciting, they tend to skitter all over the kitchen.  A Quisinart with the top cutting slicing blade makes this easier, just pour the cranberries and nuts in all at once!
