Kate's Wicked Awesome Banana Spice Cake
- 2½ Cups sifted cake flour
- 1⅔ Cups sugar
- 1¼ tsp baking powder
- 1¼ tsp baking soda
- 1 tsp salt
- ¾ tsp cassia cinnamon
- ¾ tsp ceylon cinnamon
- ¾ tsp nutmeg
- ¾ tsp cloves
- ⅔ Cup room-temp butter
- ⅔ Cup buttermilk
- ~3 mashed ripe bananas (1¼ Cups)
- 2 large eggs
- ⅔ Cup chopped nuts (if you must)
Sift together: Flour, Sugar, Soda, Powder, Salt, Spices
Add Bananas with Butter and half of Buttermilk to dry ingredients
first, beat 2 minutes, then add Eggs with the rest of the Buttermilk.
Fold in nuts last.
Bake in 2, 9” rounds (30 to 35 mins) or one 13”x9” (45 mins) at 350°

Note: I've never made this with nuts, I can't promise that it won't be
TOTALLY RUINED by them. ;-) When I don't want to buy a quart of
buttermilk just for the ⅔ Cup this recipe needs I substitute regular
old milk. Doesn't give it that tang, but it's still fine. This
recipe is an amalgamation of three cake recipes found in “Betty
Crocker's Picture Cookbook” circa 1950. You'd love it, it's full of
butter, cream and lard. :-D
