Mrs. Elwell's Oatmeal Pancakes
- 1 cup rolled oats
- 2 teaspoons sugar
- 2 teaspoons baking powder
- 5 tablespoons flour
- ½ teaspoon salt
- 1 cup milk
- 2 large eggs
Grind about ⅔ of the dry oatmeal into powder in blender
Add other dry ingredients and blend to mix (not too much, don't powder the rest of the oats)
Add wet ingredients and blend to mix
Cook
Notes:
Keep the pan buttered even if you're using a non-stick pan
it makes for a nicer surface texture and visual appeal.
Add cut up frozen cranberries (not craisins, but raw whole ones)
for a nice bit of tart flavor. They don't need to be (shouldn't be)
sweetened.
Frozen blueberries mixed in (after the blender part) work well, too.
