This came from a friend who swears by it.
Preheat oven to 325°F
Cream together sugar, eggs, oil
Sift together flour, cinnamon, nutmeg, baking soda, salt
Hand stir in carrots, vanilla, and nuts
Bake in:
Two (2) 9-inch baking pans for ~40 minutes

One (1) 9x13-inch pan for ~60 minutes.
